Jaggery making is a 4 step process. 1. Extraction of raw cane juice .2. Clarification of extracted of sugarcane juice  3. Concentration of clarified juice into semi-solid jaggery 4. Cooling of semi-solid mass into solid jaggery.

Clarification step  is a most significant step  as it determines the quality and yield of end – product. Removal of multiple impurities like colloidal matter, inorganic salts, fibre, various nitrogenous substances, lipids, gums, wax organic acid, inorganic acid, pectin etc. is called a clarification of sugarcane juice. The traditional clarification process is manual, inefficient, removes impurities partially and requires high boiling temperatures along  with use of chemicals like lime and Sodium Hydro sulphite. This results in over 10 % loss in the yield, accompanied with thermal losses too. High boiling temperature results in sucrose loss due to inversion and caramelization of sucrose. Inefficient removal of impurities results in a dark coloured jaggery. 

The big project aims to demonstrate POC for a novel, scalable, chemical free, electrolysis based system (EC reactor + process) to clarify impurities (soluble and insoluble) in sugarcane juice used for jaggery production.
